Title: Slimmers Pavlova

6 Egg whites
1tsVanilla essence
 pnCream of Tartar
3tsVinegar
 pnSalt
  Artificial sweetener taste

Beat egg whites with cream of tartar and salt until peaks form. Carefully fold in vanilla, vinegar and sweetener and beat until stiff. Cover baking tray with foil, spray with non-stick spray. Spoon or pipe mixture into 20cm circle. Bake at 110deg C for 1 - 1 1/2 hours until crisp and dry. Remove from oven, turn upside down and cool. Spread with cream substitute and fruit.

Portion diets - Negligible Calories - 90 per serve (375KJ)

Cream Substitute

150gms non-fat yoghurt 3 ts orange or lemon juice 120gms low-fat cottage cheese Artificial sweetener to taste

Mix in blender until smooth and resembles whipped cream. Can be kept several days in fridge.
